Antonio Bachour, winner of The Best Chef Awards’ 2018 and 2022 World’s Best Pastry Chef titles, will be making his debut at the Four Seasons Hotel Bangkok at Chao Phraya River. A unique afternoon tea and cake shop takeover at Cafe Madeleine will highlight Bachour’s avant-garde approach to pastry, which he developed during his formative years in his family’s Puerto Rican bakery. Bachour is the creative force behind the critically renowned Bachour Miami, Bachour Mérida, Tablé Bachour, and HABIBI. He is currently located in Miami.
From January 27 to February 18, 2024, Bachour and Executive Pastry Chef Andrea Bonaffini of Four Seasons Hotel Bangkok will be working together to create a special Afternoon Tea that not only showcases their culinary skills but also embodies the spirit of love in the lead-up to Valentine’s Day. Delicious sweet dishes and Bachour’s famous pastries will be served alongside an opulent feast for the eyes and mouth during this one-of-a-kind culinary experience. In addition to this partnership, The Lounge’s Chef de Cuisine, Patiwarata Chutiwat, created a stunning savory menu.
The Afternoon Tea is going to be a luxurious experience. The menu is a masterfully composed symphony of flavors, featuring dishes like balik salmon with Parisian chaudfroid and oscietra caviar, as well as savory treats like mukrat lime poached in local wild honey with pink pomelo. The famous Bachour chocolate rocher with gianduja hazelnuts, lime tart with almond frangipane, berry shortcake, and the exquisite “Sunshine” with banana and passionfruit are among the sweet treats.
In addition to the Afternoon Tea, Bachour will be taking over the Hotel’s patisserie, Cafe Madeleine, showcasing his signature viennoiserie baked goods and mono-portion cakes. The pop-up menu at Cafe Madeleine boasts an array of delectable treats, including the mouthwatering strawberry mascarpone croissant; yuzu coconut cake; hazelnut pain aux raisins; and a variety of mono-portion cakes such as camembert cheesecake, pistachio cake, and the irresistible rocher.
