World-famous Spanish chef Dani Garcia will open the new tapas restaurant Bibo to replace Red Rooster run by chef Marcus Samuelsson. The Mondrian Shoreditch hotel in England, where Garcia’s new restaurant will be located, will open in July, following a rebranding and major transformation.

“It is an honour to open our first UK-based restaurant and we are excited to establish the property as the heart of the Shoreditch food scene,” said García. “I have always been fascinated by the vibrant energy of London and look forward to welcoming guests to our restaurant in the Mondrian hotel, which is sure to become a true icon in the district of Shoreditch.”
