Spanish chef Jesus Escalera is known for using extraordinary tastes together with harmony in his sweet restaurant La Postrería in Mexico. Most recently, Escalera won the title of Best Pastry Chef in Latin America.
Sevilla-born chef, started to work in The Fat Duck, El Celler de Can Roca, Heston Blumenthal, although he didn’t want to work in pastry business at first. After accepting an offer from Mexico in 2011, Escalera started planning his new dessert restaurant with Mexican chef Fernanda Covarrubias, who soon to be partner.
In 2013, he opened his sweet restaurant La Postreria and soon became known with the concept flavors he created there. At the ceremony last October, the 32-year-old chef, who has been named the Best Pastry Chef in Latin America, is now renowned for his using different products such as coriander, olive and even pepper in harmony.
