Paco Roncero

Paco Roncero was born in Madrid in 1969. He studied at Escuela de Hostelería y Turismo de Madrid and later did internships in such emblematic restaurants in the city as Zalacaín (the first restaurant in Spain to achieve 3 MICHELIN Stars) and at the Ritz Hotel. In 1991, he joined Casino de Madrid, one of the most exclusive private clubs in the city, to work in the catering and events department, where in 1996 he was promoted to head chef. Roncero’s innovative and restless nature was recognized in 2005 with the Chef L’Avenir 2005 Prize, given by the International Academy of Gastronomy. In 2006, a year of great milestones for Paco, he received one of the most coveted awards for Spanish chefs: the National Gastronomy Prize, awarded by the Spanish Royal Academy of Gastronomy. In 2020, Paco was recognized as one of the 100 best chefs in the world by the prestigious international list The Best Chef Awards. Since then and uninterruptedly to date, he has been one of the Top 100 best chefs in the world. In October 2023, he received the award for Best Head Chef at the 1st Edition of the Cómete Madrid Awards presented by the Madrid Association of Catering Companies (AMER). In February 2024, he was honored in Ibiza by the Balearic Horeca Association for his contribution to the island’s gastronomic scene with his Sublimotion project.
