Selected as the world’s best restaurant, the 3 Michelin-starred Mirazur began welcoming guests on June 12 with its renewed biodynamic agriculture-focused menu.
Mauro Colagreco, Chef of the world-famous Mirazur, described the quarantine process by saying, “During the lockdown, I had a lot of time to think. Together with my wife Julia, we began to question everything. ‘What type of society do we want to live in? What kind of world do we want to leave to our kids? How should we be eating? Consuming? Working?'” As a result of this process, which they questioned themselves, the new menu, ‘Universe Mirazur’, was born under the principles of biodynamic agriculture and the influence of the moon and stars. In biodynamic agriculture, it is believed that the phases of the moon determine the rhythm of the plants and the plant is cultivating and harvesting according to the four parts of plant life: roots, leaves, fruits and flowers. These principles of biodynamic agriculture will be at the center of the Universe Mirazur.
According to the Robb Report, the restaurant will offer a tasting menu themed on leaf and salad greens in ‘leaf days’, which is when the moon’s energy concentrates on leaves. On root, fruit and flower days, Mirazur will shape its new menu by focusing on these special periods. Celebrity chef Colagreco said, “I couldn’t imagine reopening the restaurant as it was before. I lost all motivation. It was a really difficult time for me. But I knew that this was the time to mobilize and provoke change,” about the new menu.
