Tom Sellers, chef and owner of the two-Michelin-starred Restaurant Story in Bermondsey, will open his new restaurant at 1 Hotel Mayfair. The name of the restaurant, which will focus on sustainability, locality and organic ingredients, has not yet been announced.

Making a statement about the new restaurant project, Sellers said, “I look forward to bringing this new project to Mayfair. 1 Hotels’ unrivalled focus on sustainability and their innovative approach to hospitality is a natural fit with my own food ethos – by partnering with them together we can push the boundaries of zero waste, conscious creativity.”
