Ranked number one on the World’s 50 Best Restaurants list, chef Mauro Colagreco brings inspiring Mediterranean botanical cuisine to his new restaurant Côte on the banks of the Chao Phraya River in Bangkok, Thailand, with the concept of ‘Riviera to the River’.

Guests visiting chef Colagreco’s new restaurant Côte, which opened today at the Capella Hotel and Resort, Bangkok, will be able to enjoy a nine-course ‘Carte Blanche’ dining experience, a unique seasonal-inspired menu after trying out small tasting plates and champagne cocktails before dinner. Following the unique menu, guests will be able to participate in the aperitif feast at the Green House, where the hotel grows more than 100 herbs for use in the kitchen. Mauro Colagreco, “When I arrived in Bangkok I fell in love. It is as simple as that. The passion for food and the culture and spirit – from the innate understanding of nature and the seasons to the history and flow of the river made this just the perfect place. Bangkok is an inspiration, as of course is the Riviera. Between them, we will create a magical new dining destination, of that I am sure,” said.

Colagreco has designed a unique menu for Côte, but the influences of his Menton restaurant Mirazur are plain to see, such as the monkfish ‘a la cacciatora’, which marries the sea and land in a recipe that includes chicken. Daily sourced Thai ingredients such as ginger, lemongrass, kaffir lime and pomelo will infuse the cuisine with the flavours of locality.

Chef Colagreco will work closely at Côte with Capella Bangkok’s own culinary team – Executive Chef, Anthony Scholtmeyer, Chef de Cuisine Marc Vasseur and Chef at Côte Davide Garavaglia, a former Chef de Cuisine of Mirazur.
