Sustainability-focused chef Mark McCabe has been named head chef at Simon Rogan’s Henrock Restaurant. McCabe, who is a partner and executive chef at The Ethicurean Restaurant, said he was thrilled to be working with the world-renowned, three-Michelin-starred chef Simon Rogan.

“It’s been my dream for a long time”

Michelin Green Star chef Mark McCabe announced in a social media post that he will be working with Simon Rogan at Henrock. Stating that he has considered Rogan’s restaurants to be the pinnacle of excellence since he started cooking, McCabe said that working with him has been a dream of his for a long time and he still can’t believe it has come true.

Simon Rogan also celebrated Mark McCabe’s appointment as head chef with a post on social media: “I’m thrilled to announce that Mark McCabe is our new head chef. Mark is not only a very talented chef, but also has a great understanding of sustainability”.
