The Aubrey, Japanese izakaya, the new venture of Maximal Concepts and Mandarin Oriental, will begin hosting guests in 2021.
Maximal Concepts and Mandarin Oriental are set to welcome 2021 with a new collaborative undertaking in The Aubrey, an eccentric Japanese izakaya on the hotel’s 25th floor. Scheduled to open in January next year, the upcoming opening is part of the hotel’s programme to reimagine its iconic top floor. The hotel has recently undergone some major changes when the two Michelin star French restaurant Pierre and sky-high bar M Bar closed their doors earlier this year. An award-winning choice for Chinese cuisine, Michelin-starred Man Wah is taking over M Bar’s space and is currently on its six-month-long renovation process, scheduled to reopen in January 2021.
During this hiatus, the restaurant’s space has been transformed into Yum Cha by Man Wah, a dim-sum pop-up offering chef Wong Wing-Keung’s Cantonese creations, which is only open on the weekend, Tatler Hong Kong reported. Meanwhile, the new space to be occupied by The Aubrey –which was previously home to Pierre– will feature three distinctive bar experiences where guests can enjoy a variety of Japanese craft cocktails, whiskies, and cuisine, perfectly curated on the foundation of exceptional and sustainable ingredients.
With an uninterrupted view of Victoria Harbour, the 25th floor has long been coveted as one of the most awe-inspiring dining locations in the city.
