Chef Sang Hoon Degeimbre and Carine Nosal, the owners of the 2 Michelin-starred L’Air du Temps restaurant in Liernu, Belgium, decided to temporarily turn their restaurants into farm shop after the government’s final decision.

After the Belgian government announced on Friday that all restaurants will close for 1 month starting Monday, October 19, the country’s world-famous restaurant with 2 Michelin stars, L’Air du Temps, developed a creative solution. Chef Degeimbre, who will sell the products that will come to the restaurant in the coming days and weeks in the restaurant that they have temporarily converted into a store, said that the store will be opened in the restaurant for 4 weeks between 13:00 and 19:00 from Tuesday, October 20. Famous chef Degeimbre said, “Yet again, the restaurant sector is impacted by what is going to be moment in history. It is extremely rare for generations of restauranteurs to face what they have had to face in 2020.”

Sang Hoon Degeimbre said that during the next weeks, they will have to put some of their employees on temporary unemployment, stop orders from producers and farmers who heavily depend on the restaurant for their survival. “In some cases, some of our orders are planned one or two years in advance,” he said.

“You will be able to find fresh and seasonal produce also from the sea as well as from our garden as well as products that we will be working on such as condiments and herbs and spices from our garden. We will put in all our passion and also have this will to fight,” Carine and San said.

“In the coming days, we will have deliveries of ducks from Quentin Ledoux in Part Saint Laurent, an Aberdeen Angus cow grown by Elisabeth Simon of Domaine de Graux as well as peppers, courgettes, carrots, black radishes, daikon, shizo as well as other produce grown from the garden,” he said.
