Chef Julien Royer is opening his new restaurant in Singapore in collaboration with The Lo & Behold Group. Claudine, which will be opened on Dempsey Hill, will combine French cuisine with a casual dining style.
Julien Royer, French chef-owner of three Michelin-starred Odette in Singapore and one Michelin-starred Louise in Hong Kong, says that Claudine will appeal to a wider audience. Saying that he was inspired by his grandmother at the fine dining restaurant Odette, Royer will ode to his mother this time, “Claudine has been a long time in making – it was inspired by my mother’s cooking that I have held close to my heart for a long time.” Preparing to compete in the S.Pellegrino Young Chef Grande final in Milan in October 2021, Julien Royer is also mentoring the competition’s Asian finalist Kevin Wong Tat Mun.
