It’s well documented that the Nobu group’s restaurants are a huge draw for high-end foodies. And their hotel in Ibiza Bay follows suit. But now, a brand new space and exclusive culinary experience is being added to the Balearic resort’s offer; opening on 21st May, Gusto will welcome guests throughout the summer. It also marks chef Nieves Barragán Mohacho’s first return to her Spanish roots.

Gusto comes hot on the heels of the success of Bilbao-born Barragán’s London restaurant Sabor. Now among the capital’s most sought-after dining destinations, it’s a Michelin-starred establishment. Working with the freshest and highest quality ingredients and showcasing the delights of Spanish cuisine, the chef’s clear talent has put her firmly on the international culinary map. Now with Gusto, Nieves’ signature style of traditional but elevated Spanish food can shine, on home turf.

Nieves says “I can’t wait for guests to discover a new world of gastronomy on the beautiful White Isle: down-to-earth, wholesome Spanish dining for any moment and any mood. The name Gusto – which is all about taste, pleasure, feeling at ease and at home – feels so fitting as it’s exactly how I felt when I first came to Ibiza and met with the island’s wonderful local suppliers.”

Platillos and local wines

The menu is made up of platillos, small plates that take guests on a tasting journey across Spain. The flavours are honest and authentic, incorporating fresh fish, garden vegetables, local chicken, Iberian ham, oysters and red prawns from Formentera. Signature dishes will include arroz caldoso, tortilla melosa with artichokes and a daily fish special.

A selection of twenty wines will include natural and organic vintages, of which 80% are derived from Spanish wine regions (many from the neighbouring islands). Try a glass of Txakoli wine from Barragán’s own Basque country and a shot of traditional hierbas ibicencas. There will also be a curated menu of island-inspired cocktails, created around local liqueurs and Ibizan aromatic herbs and of course, chilled pitchers of vibrant sangría. Free-spirited Balearic vibes

With a serene outlook, a cooling sea breeze (most welcome in the Ibizan summer) and a buzzing poolside terrace, Gusto has an enviable location, whether enjoyed in the heat of the day, at sunset or after dark. Nautical-inspired decor and displays of fresh seafood reminiscent of local markets provide the backdrop to this free-flowing, interactive dining experience that enables diners to watch their food being freshly prepared in front of them. Ibiza Bay is also home to the signature Nobu restaurant and Chambao By the Beach, a family beach club and chiringuito (tapas bar) — all of which are much loved by locals, proving the resort’s authentic credentials.
