Endo Kazutoshi, a third-generation sushi master from Yokohama, Japan, has a rich culinary heritage passed down from his grandfather and father. He has immersed himself in various traditional Japanese disciplines, including judo, ikebana, tea ceremony, and calligraphy, which have deepened his understanding of Japanese culture. After honing his skills at top omakase restaurants in Tokyo and exploring contemporary sushi mastery with renowned chef Akitoshi Ohno. Endo ventured to London in 2006 to become head chef at Zuma restaurant in Knightsbridge, under the guidance of Rainer Becker.
In 2019, Chef Kazutoshi embarked on his own culinary journey, founding Endo at the Rotunda, which quickly earned a Michelin star. Focusing on locally sourced seafood from regions such as Dorset, Devon, Brittany, and Orkney, Endo prioritizes quality and authenticity, importing essential ingredients like soy sauce and rice from Japan. His commitment to excellence was duly recognized when Endo at the Rotunda was named the best restaurant in the UK at the GQ Awards in 2023 and ranked 38th in The National Restaurant Awards’ list of the UK’s top 100 restaurants in the same year.
