As far back as his memories go, there are marine and iodine smells linked to his native Brittany. His passion for cooking arose when he was working at sea.

After successful experiences in the provinces, his desire to discover French gastronomy led him to Paris. It was there that he discovered great cuisine, refined his palate and became more demanding.
After 12 consecutive years of 3 Michelin stars at the Ledoyen restaurant, the Four Seasons George V Paris, offered him the challenge of winning back the 3rd Michelin Star for the restaurant Le Cinq, which he obtained in 2017.
Now more Parisian than ever, Christian Le Squer aims to perpetuate the “French art of living” within the hotel. He imagines elegant, gourmet and generous dishes that are inspired by the spirit of the times.
“I first have the taste of the dish in my mouth, before finding the ingredients that will compose it. It’s an intuition, something that grabs you. It’s like love at first sight.”
If his greatest pride is to engrave a dish, a moment, a sensation, in the memories, he wishes above all to offer a memorable gastronomic experience.
