Chiara Pavan, born in 1985, is dedicated to sustainability through what she likes to define environmental cuisine. Since 2017, she has been heading Ristorante Venissa alongside Chef Francesco Brutto, located on the island of Mazzorbo in Venice’s northern lagoon. Her culinary philosophy emphasizes the reduction of food waste and the use of local, seasonal ingredients. The menu at Venissa Restaurant features only vegetables and fish, using invasive species that have significantly impacted the ecosystem of the lagoon and upper Adriatic Sea in recent years.
Venissa Restaurant has been awarded a Michelin Star and a Michelin Green Star for sustainability. Named Chef of the Year by l’Espresso in 2019, and Chef Internacional by Elle Spain in the same year, Cheffe Chiara was also awarded the Chef Donna award by Identità Golose and Gambero Rosso in 2021. She recently received the No Food Waste award from Gambero Rosso and was listed among the 25 Most Powerful Chefs in Italy by Forbes Italy.
