Playful Indian restaurant Carnival by Trèsind has launched a new menu in time for the summer season.
The restaurant, which was awarded one toque by Gault&Millau in 2022, comes from the team behind famed Indian restaurant Trèsind and Gault&Millau-rated restaurant and tasting experience, Trèsind Studio.
Found in Dubai’s DIFC’s Burj Daman building, the new menu at Carnival has been put together by chef Himanshu Saini. Saini also leads the kitchen Trèsind Studio, and is known for his creative cuisine, exquisite plating and boundary-pushing ideas.
Dishes on the innovative new menu include chicken khurchan – a mix of chicken, salsa beans, black olives and avocado cream, served with blue corn tortilla chips, and the Maggie Trolley – Carnival’s take on traditional instant Maggi noodles – served in three different flavours.
There’s also Carnival chaat – a take on the traditional ghewar, topped with sweet and sour Indian chutneys and toppings. For those with a sweet tooth, there’s a new dessert to try called Go Bananas.
