In 2021, Paul Berglund will be the Executive Chef of Mertens Prime Restaurant, which opened in Michigan under the name New Hotel Mertens Brasserie and rebranded in October.

Named the Best Midwest Chef by the James Beard Foundation in 2016, Chef Paul Berglund will welcome visitors with original recipes inspired by French cuisine in the restaurant’s new menu. The chef will also oversee the menus of Rooftop, Café Mertens and 9th St.Steaks of the same building.
