Chef Jeffrey Robinson and his wife Caroline are to open a sustainability-focused pub in the village of Flushing, Cornwall, next month. The couple previously ran the New Yard restaurant in Mawgan, which won a Michelin Green Star for sustainability in 2021. The couple’s new pub Harbour House, formerly the Seven Stars, will open in late June and have a similar focus on sustainability.

Four pub rooms overlooking the sea are expected to open in the winter.

The new site will serve lunch and dinner, as well as pub snacks and small plates and showcase produce from the surrounding area. There will be two covers available on an intimate chef’s table.

Robinson told The Caterer the menu will go “back to basics” and offer à la carte dishes such as “whole-grilled fish” and “steak for two”.

At New Yard, Cornwall-born Robinson focused on sourcing ingredients from their own walled garden, which he said cost “upwards of £70,000” to build and maintain.

The venue worked with produce available from suppliers each day and gave guests no notice of the menu until they were seated. The new site will follow similar principles.

Robinson said: “At New Yard, it was not only the organic, regenerative farming methods used by ourselves and our suppliers, it was the move of taking away the menus in 2020 that really made the difference.

“This forced the creativity into my team and I every single day. We had to come in fresh and ready to re-create an experience that was not available yesterday, that wouldn’t be available tomorrow – but that was absolutely created for this very one lunch dinner service.”

The majority of staff from New Yard have stayed on to work with Robinson, taking on part-time shifts while waiting for the opening of Harbour House.

He added: “We’ll be offering a dining experience that is obviously my signature, but in an affordable way. This means we can continue to support the local community, local producers and also means we can create year-round positions for my invaluable and dedicated team.”
