Award-winning Chantelle Nicholson, known as the chef owner of the now closed Tredwells in Covent Garden, has revealed details of her new restaurant. Opening on Mayfair’s Duke Street in March next year, Apricity will continue Nicholson’s approach to vegetable-centric cooking with a strong focus on sustainability.

Apricity will offer an “extremely seasonal” menu, as Nicholson calls it, with ingredients from local suppliers and small farms. It will also adopt planet-friendly practices and be zero waste. Besides the à la carte presentation, the restaurant will offer two tasting menus; one vegetarian and one non-vegetarian. Dishes include crispy brussels sprouts served with vinegar made from spent beer grain, a byproduct of the brewing process; Roasted Kuri squash with fermented fire flame peppers and miso aioli; venison with elderberry and walnut paste; and Cornish mackerel and Shetland mussels topped with pear pickles.
