Michelin-starred chefs Chris and Jeff Galvin have been selected as the new executive chefs of Middle & Over, the fine dining restaurant of Glyndebourne, an opera house in England. The Galvin brothers, who will be executive chefs at the restaurant for the next three years, will first attend the 2021 Festival in Glyndebourne and recreate the dishes at Galvin La Chapelle restaurants.
Galvin chefs have designed three seasonally changing menus that include some special dishes. The menu will include fennel salad, Loch Duart salmon prepared with avocado and pink grapefruit, slow-cooked beef ribs, truffle paste, rainbow chard, crab lasagna, hot Valrhona chocolate fondant dessert with raspberry puree and apple tart tatin, the signature dessert of Galvin restaurant for more than 15 years.
