Mauro Colagreco, the chef of the Mirazur restaurant in Menton, has announced his new project dedicated to marine species, which he will implement in collaboration with the Oceanographic Museum of Monaco.

Currently, number one on the prestigious list of The Worlds 50 Best Restaurants, Mirazur’s chef Mauro Colagreco explains in an interview with Michelin that his goal is to create a more sustainable fishing season without risking threatened and endangered fish species.
