Located in Marseille, France’s newest three Michelin-starred restaurant AM par Alexandre Mazzia’s owner and chef Alexandre Mazzia talked to the Food and Wine Gazette about the success of his restaurant.

Former basketball player and current chef that made a name for himself in the world of gastronomy, chef Mazzia is known for his innovative perspective on food. While telling the story of how he founded the restaurant, “No path was mapped out in advance. At AM, no one knows exactly what they will taste when they arrive. For me, whatever the destination, the most important thing is the journey” says Mazzia and thanks the Michelin Group with the words: “The Michelin Guide has certain codes and they have awarded a restaurant that does not follow any of them. I only follow my instinct. The three stars are also a way to apologise to my family who tell me I work too much. This star is one more light to illuminate Marseille.”
