James Cochran, the former chef of Michelin-starred restaurants, will reopen the restaurant in Islington at 12:51 under the newly released fried chicken delivery brand Around The Cluck.
James Cochran, the former chef at the Michelin-starred The Ledbury and The Harwood Arms, said top-end dining is not viable at his Upper Street-based restaurant under the distance limitation between tables. He said: “We are %100 bringing back 12: 51 but probably not until next year. Re-opening under a one-meter rule would see us to lose about two-thirds of our trade. I’d have to charge £150 per person to cover my overheads.“ For Cochran, who was named “Champion of Champions ” on the Great British Menu, creating the innovative menu of 12:51 while keeping the distance between employees in a narrow kitchen was also going to be difficult.
Cochran’s new brand Around The Clock has had great success in online ordering apps such as Deliveroo, Uber Eats and Slerp, Big Hospitality UK reported. Chef Cochran said: “It’s totally different operation from cooking high-end fine dining in an intimate restaurant to cooking 100 KG of chicken a week”, adding that it plans to hold 12:51 for private dining events.
