Christophe Hardiquest, chef of two Michelin star restaurant Bon Bon in Brussels announced the opening of Le Bon Bistro by Bon Bon at his restaurant Bon Bon.
The bistro, which will be open from Sunday to Tuesday, will be run by Adrien Cunnac, who has been working as Sous-Chef and the right-hand man with the Belgian chef for eight years. Hugo Traineau, who has worked at Bon Bon for four years, will be in charge of hospitality in the dining room. “We are pleased and proud to start this new adventure,“ Christophe Hardiquest said. Restaurant Bon Bon is normally closed 3 days a week, from Sunday to Tuesday, to rest employees and balance their work life. However, chef Hardiquest decided to open his restaurant every day of the week so that he could use the area at fine dining restaurant useful as a bistro, including 6 services per week, the Food and Wine Gazette reported.
